Soup is a health food staple. It is easy to make, can be made with whatever you have in the house, and is cheap to make as well. Of course, it is healthy, when you use the right ingredients.
Start with a low sodium chicken or vegetable broth. You can use as much or as little as you would like to make. If you have the capacity, make a large amount and freeze in individual containers.
Have on hand: fresh vegetables, especially carrots, celery, onion, potatoes, green beans, and canned staples such as beans, small pasta shapes, brown rice or barley. The whole story can be found at http://jgirlatlaw.wordpress.com/2011/07/05/just-like-lellis/ (fast cooking is okay!) Canned tomatoes or tomato paste can add color and nutrition to any soup.
Soup can be made vegetarian, or you can simmer some chicken in your broth. Cut up your fresh vegetables and throw them in. Let simmer for thirty minutes or so. Add tomatoes or tomato paste, if desired. Cook barley, rice or pasta in another pot to avoid thickening the soup. Easy, healthy soup rich in vitamins and fiber. Rinse canned beans and add to soup. Add garlic, pepper, dill or other spices to taste, and you have an easy, inexpensive custom made soup.
